With their sweet but satisfying flavor, fruit and nut bars are definitely a favorite snack of mine. While it’s easy to buy them at the grocery store, the cost can add up over time, especially if they’re a regular part of your snack routine. With 3 simple ingredients and a little bit of water, these PB&J Fruit and Nut Bars are easy to make and perfect for beginners in the kitchen. Providing carbohydrates from the fruit and protein and healthy fats from the nuts, these PB&J Fruit and Nut Bars are a great afternoon pick-me-up that’ll give you a boost of energy while still keeping you satisfied until your dinner meal.
- 1.5 cups roasted peanuts
- 1.5 cups dates, chopped
- 1 cup raisins
- 3 tablespoons water (Use additional tablespoons of water as needed.)
Pulse peanuts in food processor until finely chopped. Remove and set aside.
Pulse dates and raisins in food processor until finely chopped. Add 1 to 2 tablespoons water if needed.
Return peanuts to food processor, and pulse together dried fruit, nuts, and 3 tablespoons of water until mixed. If your food processor has difficulty mixing the fruit and nuts together, add an additional tablespoon or two of water.
Spread into baking dish lined with parchment paper, and refrigerate for at least 2 hours before cutting into 10 bars. Serve as an energy-boosting snack or as a sweet treat after a meal.
